What You'll Do
Create your own icy artisanal treat. Make a custom simple syrup infused with unexpected ingredients like citrus, cinnamon or rose water, then pair it with a carefully chosen combination of fruits and juices.
Be reflective as you blend, taste and tweak your recipe to achieve popsicle perfection. Pour your mouthwatering mixture into molds and pop in the freezer for a batch of one-of-a-kind, ready-to-share snacks.
Note:
While we offer a similar class for older kids, the pacing and content of this class is carefully calibrated for rising 4th – 5th graders.
What You'll Need
Ingredients
- 2 cups fresh or frozen fruit (strawberry, mango, watermelon, etc.)
- 1/4 cup citrus juice (lemon, lime, etc.)
- 2/3 cup sugar
- 2/3 cup water
- Syrup flavoring options, you’ll only need one (see Additional Prep section for details):
- Dried whole spices (cinnamon stick, star anise, bay leaf, peppercorn, etc.)
- Fresh Herbs (rosemary, basil, mint, etc.)
- Extracts/ Flavorings (vanilla, almond, rose water, etc.)
- Other Natural Flavors (lemon grass, citrus peel, ginger root, tea, etc.)
- Optional for creamsicle: 2 tablespoons milk (dairy, nut, coconut), yogurt, cream, etc.
Materials
- Stove or electric burner
- Small saucepan
- Silicone spatula or wooden spoon
- Pot holder or heat-proof surface for hot saucepan – Measuring spoons and cups
- Blender
- Freezing options (choose one):
- Popsicle molds
- Ice cube trays or small disposable cups + plastic wrap + popsicle sticks/toothpicks/wooden skewers
- Depending on simple syrup flavor, you may also need:
- Vegetable peeler (for peeling citrus fruit)
- Cutting board and knife (for cutting ginger, lemongrass, etc.)
- Hard object like a food can (for crushing cardamom pods, star anise, etc.)
- Mesh strainer or spoon (for removing small pieces from syrup)
- Optional: Paper and pencil for recipe writing and note taking
Technology
- Computer or tablet with speaker and camera
- Internet access
- Zoom application installed, signed in with child’s name
Additional Prep
- As you gather ingredients, encourage your child to think about what flavor combinations they want to try. Select fruit, citrus juice and syrup flavoring options accordingly.
- As long as kids have enough of each ingredient on hand, there’s no need to measure them out before class. Note that the measurements in the Ingredients section indicate the most of one ingredient they’re likely to use; they’ll start with smaller amounts and add more to taste.
